I had this oh so delicious recipe pinned on Pinterest about 2 or 3 years ago, but I remember getting an email saying they had to delete the pin because the copyright owner didn’t want their content on Pinterest, and didn’t want to receive attribution for the content. This is too bad because now I can’t give them credit or figure out the original recipe, but luckily I had written down some version of it years ago and just tweaked it to our family’s enjoyment.
I love it because it’s filling and easy. It doesn’t make the whole house hot, and you feel satisfied after eating it. With that said head over to the grocery store, get cookin’, and enjoy!
Fresh Quesadilla

Ingredients
1 onion sliced
1 bell pepper sliced
2 tablespoons of olive oil
1 cup of drained black beans
2 tablespoon taco seasoning
8 medium soft flour tortillas
4 avocados peeled, halved, seeded and sliced
1/2 cup of minced cilantro
2 limes cut in half
2 cups of light Cheddar or mozzarella cheese
You can use oil or cooking spray for grilling
Instructions
Set your stove to medium heat, and saute the onion and bell pepper in 2 tablespoons of oil for 2-3 minutes or until tender. Then add the black beans and taco seasoning. Cook them all together for another minute. Transfer the mixture into a small bowl and set it aside.
Using the same pan after a quick wipe down, return it to medium heat and drizzle with a light layer of oil or spray with cooking spray.
In a small bowl, lightly mash the avocados with a fork. Stir in the cilantro and the lime juice to taste. Season the avocado mix with salt and pepper to taste and spread a quarter of the mashed avocado onto half of a tortilla, topping it with the bean mixture and a 1/2 cup of cheese. Fold the tortilla closed over the veggies.
Repeat until all of the tortillas are filled, and there is no more filling left.
Cook on medium-high heat for 2-3 minutes per side or until the outside is crispy and cheese has fully melted. Serve with your favorite salsa or sour cream, and Enjoy!
