Have you ever tried to feed your family vegetables? My entire lifetime in motherhood has been trying to get my family to eat vegetables including my husband. I’ve learned to be creative in the process.
I serve vegetables in disguise in my home! I’ve blended greens in the pasta sauce; I’ve baked cupcakes and bread with veggies in the mix. I have combined them in smoothies, and everything else you can think of. And they have eaten it all! Here is our favorite Zucchini Bread recipe that tastes just like coffee cake.
Bread Ingredient List
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon ground cinnamon
- 3 cups of all-purpose flour
- 2 1/4 cups white sugar
- 2 cups grated zucchini
- 1 cup chopped walnuts
- 1 cup vegetable oil
- 3 teaspoons vanilla extract
- 3 eggs
Crumble Topping Ingredient List
- 1/2 Cup packed light brown sugar
- 1/2 Cup all purpose flour
- 4 Tablespoons melted unsalted butter
- 1/2 teaspoon ground cinnamon
Brown Sugar Glaze Ingredient List
- 1/2 Cup packed light brown sugar
- 2 Tablespoons water
- 1/2 Teaspoon vanilla extract
Ready in 1 hour & 40 minutes
Cook Time: 1 hour Prep Time: 30 minutes Serves: 24
- Preheat oven to 325 degrees F (165 degrees C). Grease and flour two 8 x 4-inch pans.
- Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
- Beat eggs, oil, vanilla, and sugar together in a large bowl.
- Add sifted ingredients to the creamed mixture, and beat well.
- Stir in zucchini and nuts until well combined.
- Pour batter into prepared pans.
- To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake.
- Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean.
- Remove from the oven and let cool on a wire rack for at least 15 minutes in pan.
- Make the glaze: In a bowl, combine sugar, vanilla, and water and mix until smooth. Drizzle the mixture onto the cake and let harden slightly. Or you can skip the glaze and cover with powdered sugar.
Best paired warm with a glass of cold milk, hot coffee or warm tea. Best served with a smile, love and a joyful heart.
